Cheesy Garlic Bread

So if you've followed my blog for any time at all, you'll know by now that 1. I love bread and 2. I love cheese. So, anytime that both of those are mixed together, I'm in heaven. I usually don't measure what I do when I slather up a loaf of french bread. Typically, I just mix some spoonfuls of this and that together and voila, yummy cheesy bread. But this time I thought I'd share what I do with you guys. It was so delicious. I served it awhile back when I made Chicken Parmesan for some friends I had over for dinner. It's easy, delicious, and full of calories, but who cares?

pay no attention that there are only 2 slices pictured, I forgot to take a picture until this was all that was left!

Cheesy Garlic Bread
from a couple of recipes here and there including Pioneer Woman

Ingredients:
1 loaf french bread
4 TBSP butter, softened
1/4-1/2 cup mayonnaise (I know sounds yuck, but it isn't!)
2 cloves garlic, minced
2 green onions, chopped, both green and white parts
1 1/2 cups cheddar cheese
1/2 cup mozzarella cheese *You could also use monterey jack, or whatever cheese you prefer.
1/4 cup Parmesan Cheese

Directions:
Preheat oven to 425. Slice loaf of bread in half, lengthwise. Spread butter on both halves generously. Place bread in oven until it begins to brown, about 5 minutes or so. Remove bread from oven. While bread is toasting, in a small bowl, mix mayonnaise, garlic, green onions, and cheeses. Now you could really use whatever cheeses you want. I sometimes omit the mozzarella and only use cheddar, or the opposite. It's really what I have in the fridge. This particular night, I think I had all of these cheeses, so I used all of them. Now, spread the cheese mixture evenly on top of the warm loaves and place back into the preheated oven. Bake until the cheese is melted and bubbly, about 8-10 minutes. Slice and serve warm.
