Sweet Treat Tuesday-Easy Peasy Peanut Butter Cookies

I made these cookies awhile back, and they were so good! And the even better part about these cookies? They are easy peasy, and I mean that! Mix, scoop, bake, eat (in that order). These are also gluten free for those of  you who cook gluten free. Enjoy!

Peanut Butter Cookies
slightly adapted from Siggy Spice

Ingredients:
1 cup peanut butter (smooth or crunchy)
1/2 cup white sugar
1/2 cup brown sugar
1 egg
1 tsp vanilla
1/2 tsp baking soda

Directions:
Preheat oven to 350 degrees.

Combine all ingredients until incorporated. Drop by tablespoonful or cookie scoop onto a cookie sheet.
Use a fork to flatten a little bit, criss crossing the fork.

Bake for 8-10 minutes. They may not seem done, but they are. Let cool about 5 minutes, then place on cooling rack.
