Pacific Rim Ginger Beef and Snap Peas and a *GIVEAWAY*

I am participating in the Fab with Five recipe contest hosted by Saucy Mama. If you haven't heard of Saucy Mama (Barhyte Specialty Foods), then you should check them out. They have some really great sauces, marinades, mustards, and dressings. I usually try to make most of those things from scratch, but it is always nice to have a bottle of something yummy in the fridge that you know doesn't have additives or fillers in it to make dinner time easier. They sent me a box of 6 different sauces and mustards to experiment with to come up with new recipes. This is my first entry for the contest. One of the sauces I was provided with was Pacific Rim Ginger Dressing. From the moment I stuck my finger in the dressing to taste it I loved it. It's got a little bit of sweetness like teriyaki sauce, but is a little more savory than that. I thought it would go great on beef, and it did. It didn't have to marinate long to have a great flavor, and this meal can be made in 30-45 minutes depending on your marinating time, which is always a plus for week night meals!

Pacific Rim Ginger Beef and Snap Peas

Ingredients:
1 1/2 pounds thinly cut sirloin or flank steak
1/2 cup Saucy Mama's Pacific Rim Ginger Dressing
1/2-1 pound Fresh Snap Peas (or Snow Peas), ends trimmed
2 green onions, chopped
3-4 tablespoons olive oil
rice, cooked (I use brown.)

Directions:
Slice meat into thin slices against the grain. Add sliced meat to bowl and toss in sauce so that all meat is covered. Cover and place in fridge until ready to cook it. I let mine marinate in the fridge for about 20-30 minutes, but less time would be sufficient.

Wash and trim ends off of snap or snow peas.

Heat 3 tablespoons olive oil in a heavy skillet, I used an iron skillet, over high heat. Add snow peas and stir for 45-60 seconds. Remove and place on a separate plate and set aside until needed.

Allow pan to get very hot again. (If you think you need more oil add it now.) With tongs, add half the meat mixture, leaving most of the marinade still in the bowl. Add half the green onions. Spread out meat in a single layer as you add it to pan, but do not stir. Allow the meat to cook on one side for about a minute before flipping it over. You want the meat to cook as fast as it can in the shortest amount of time. Turn meat to the other side and cook for another 30-60 seconds. Remove to a clean plate or the plate with the cooked peas on it.

Repeat with other half of meat, allowing pan to get very hot again first. After turning it, add the first plateful of meat, the rest of the marinade, and the cooked snap or snow peas. Stir over high heat for 1-2 minutes, then turn off heat.

Serve immediately over rice.
